Creamed Vegetable Curry

| 1/2 cup | raw cashew nuts |
| 4 cups | mixed fresh vegetables (see note below) |
| 1 tablespoon | Clive Of India Authentic Curry Powder |
| 1 teaspoon | garlic crushed |
| 1 | onion diced |
| 1 tablespoon | oil |
| 1 cup | coconut cream |
| 1 tablespoon | tomato paste |
| 1/4 cup | water |
| 1 tablespoon | lemon juice |
Directions
Step 1
Heat oil and fry onion and garlic until soft. Add Clive Of India Authentic Curry Powder and fry, stirring for 1 minute.
Step 2
Note: Mixed fresh vegetables such as potato, pumpkin, cauliflower, beans, peas.
Add vegetables, cashews, coconut cream, tomato paste and water, cover and simmer 20 - 30 minutes until vegetables are cooked.
Step 3
Stir lemon juice in just before serving. Serve Creamed Vegetable Curry with rice and pappadams.
