Kerala Coast Curry
Fabulous fragrant fish curry

| 3/4 cup | coconut cream |
| 1 tablespoon | Clive Of India Authentic Curry Powder |
| 2 teaspoons | garlic crushed |
| 1 teaspoon | McKenzie's Ground Ginger |
| 2 | onions finely chopped |
| 1 tablespoon | oil |
| 5cm strip | lemon rind |
| 1 teaspoon | tamarind puree |
| 500g | firm white fish fillets |
| 1/2 | green pepper diced |
| 2 tablespoons | coriander chopped |
Directions
Step 1
Heat oil and fry onions, McKenzie's Ground Ginger and garlic until soft. Add Clive Of India Authentic Curry Powder and fry, stirring, for 1 minute. Add coconut cream, lemon rind and tamarind puree and simmer gently for 10 minutes.
Step 2
Add fish fillets and green pepper and cook gently 12-15 minutes, until fish flakes.
Step 3
Serve Kerala Coast Curry with fresh coriander, accompanied by rice and Indian pickles.
