Borlotti Beans with Braised Sausage

| 225g | McKenzie's Borlotti Beans |
| 1 tablespoon | olive oil |
| 450g good quality | meaty sausages |
| 110g | smoked bacon or pancetta diced |
| 1 | carrot finely diced |
| 1 large | onion finely diced |
| 2 cloves | garlic finely chopped |
| 1 tablespoon | rosemary chopped |
| 1 teaspoon | fresh sage chopped |
| 1 cup | dry white wine |
| 1 tablespoon | tomato paste |
| 400g tinned | crushed tomatoes (optional) |
| To taste | McKenzie's Australian Natural Sea Salt |
| To taste | McKenzie's Whole Black Peppercorns |
Directions
Step 1
Prepare McKenzie's Borlotti Beans by boiling in salted water until tender. Drain the beans reserving 1 cup of the liquid.
Step 2
Heat the oil in a large casserole dish over a medium heat and carefully brown the sausages, turning them occasionally so they are a golden brown colour on all sides.
Step 3
Remove sausages to a plate, add the pancetta, carrot, onion and garlic to the frying pan, and fry until the onion starts to soften.
Step 4
Add the drained beans to the casserole, along with the herbs, sausages and pancetta, tucking the sausages in among the beans.
Step 5
Add the wine, tomato paste and the reserved water. You can add a 400g tin of crushed tomatoes if you wish. Add fresh herbs and season to taste with McKenzie's Australian Natural Sea Salt and McKenzie's Whole Black Peppercorns.
Step 6
Place a lid on the casserole and transfer it to the oven and cook slowly for 1 1/2 - 2 hours.
Step 7
Serve garnished with the sprigs of rosemary and sage.
