Bacon and Lentil Soup

Bacon and Lentil Soup

500g bacon bones
250g bacon pieces, roughly chopped
1 medium onion, chopped
190g McKenzie's Red Lentils
1 large parsnip, chopped
1 stick celery, chopped
2 medium carrots, chopped
1 medium swede, chopped
2 1/4 litres water
Directions
Step 1
Combine all ingredients in a large pan.
Step 2
Cover and simmer for about 60-90 minutes or until thickened, stirring ocassionally. Discard bacon bones before serving.
Step 3
Garnish with parsley if desired.
