Ginger Fluff Sponge

| 2 tablespoons | self raising flour |
| 1/2 cup | McKenzie's Arrowroot |
| 1 dessertspoon | golden syrup |
| 3/4 cup | castor sugar |
| 4 | eggs |
| 1 teaspoon | cocoa |
| 2 teaspoon | McKenzie's Ground Ginger |
| 1 teaspoon | McKenzie's Ground Cinnamon |
Directions
Step 1
Beat egg whites until stiff, add sugar gradually, then yolks and golden syrup.
Step 2
Sift McKenzie's Arrowroot, self raising flour, cocoa, McKenzie's Ground Ginger,McKenzie's Ground Cinnamon three times and fold in.
Step 3
Divide mixture into two 18cm (7inch) cake tins which have been lined on the base and well greased and floured.
Step 4
Bake in moderate oven for approximately 25 minutes.
Step 5
Cool slightly before removing from tins.
When completely cool, fill with whipped cream and ice with lemon icing or dust with icing sugar.
