Waldorf Salad

| 1 cup | McKenzie's Haricot Beans or |
| 1 cup | McKenzie's Lima Beans (cooked as per instructions on pack) chilled |
| 1 cup | celery, finely sliced |
| 1/4 cup | spring onion, finely sliced |
| 2 cup | red apples, unpeeled, halved, cored and finely sliced |
| 2 teaspoons | lemon juice |
| 3/4 cup | mayonnaise |
| 75g | walnut pieces |
| To taste | McKenzie's Whole Black Peppercorns |
| To taste | McKenzie's Australian Natural Sea Salt |
Directions
Step 1
Mix together beans, celery, spring onions, apples (sprinkled with lemon juice) and chill.
Step 2
Just prior to serving, spoon the mayonnaise over, add walnut pieces and toss lightly to combine.
Step 3
Season to taste with McKenzie's Whole Black Peppercorns and McKenzie's Australian Natural Sea Salt.
Step 4
Tips: For a more substantial meal, add cold roast chicken pieces. Try spicing this salad up by adding a teaspoon of Clive Of India curry powder! The spices mellow when added to the mayonnaise and work well with the apple.
