Waldorf Salad

1 cup McKenzie's Haricot Beans or
1 cup McKenzie's Lima Beans (cooked as per instructions on pack) chilled
1 cup celery, finely sliced
1/4 cup spring onion, finely sliced
2 cup red apples, unpeeled, halved, cored and finely sliced
2 teaspoons lemon juice
3/4 cup mayonnaise
75g walnut pieces
To taste McKenzie's Whole Black Peppercorns
To taste McKenzie's Australian Natural Sea Salt
Directions
Step 1
Mix together beans, celery, spring onions, apples (sprinkled with lemon juice) and chill.
Step 2
Just prior to serving, spoon the mayonnaise over, add walnut pieces and toss lightly to combine.

Tips: For a more substantial meal, add cold roast chicken pieces. Try spicing this salad up by adding a teaspoon of Clive Of India curry powder! The spices mellow when added to the mayonnaise and work well with the apple.
