French Style Lentil & Quinoa Salad

| 3/4 cup | McKenzie's French Style Lentils |
| 3/4 cup | quinoa |
| 1 | red apple, quartered, cored and sliced finely |
| 1 | lebanese cucumber, sliced finely into batons |
| 3 | celery stalks, sliced finely |
| 5 | spring onions, sliced finely |
| Dressing | ingredients |
| 2 tablespoons | oil |
| 4 tablespoons | rice wine vinegar |
| 1 tablespoon | brown sugar |
| 2 teaspoon | lime or lemon juice |
Directions
Step 1
Prepare and cook McKenzie's French Style Lentils and quinoa in separate saucepans as per directions on packs. Take care not to overcook. Drain and set aside to cool.
Step 2
To prepare dressing, place all ingredients in a small bowl and whisk to combine.
Step 3
In a salad bowl, combine cooked and well drained lentils and quinoa, apple, cucumber, celery and spring onions. Pour over dressing and mix well.
Step 4
Refrigerate for at least 4 hours before serving.
Step 5
Tips: Try substituting rice wine vinegar with apple cider vinegar. Red, black or white quinoa can be used in this recipe. There is no flavour or nutrition difference between colours, each colour will just bring a different look to the salad. Quinoa can be found the the Health food aisle in your supermarket. Making this salad ahead of time allows the flavours of the dressing to intensify through the salad ingredients. Quinoa is an ancient seed which is the only plant source of complete protein, meaning it contains all 9 of the essential amino acids crucial to human function and health. It is low GI, gluten free, a source of calcium, magnesum, iron and high fibre, among many other nutrients. With this impressive list of attributes, is it any wonder this seed is considered by many to be a 'superfood'.
