Beef, Lentil and Feta Loaf

1/3 cup McKenzie's Whole Green Lentils
500g premium beef mince
1 medium onion, grated
1 garlic clove, crushed
1 teaspoon dried marjoram
1/4 cup fresh parsley, finely chopped
1 teaspoon lemon rind, grated
2 tablespoons tomato paste
100g feta cheese, crumbled
1 egg, beaten slightly
To taste McKenzie's Whole Black Peppercorns
1/4 cup parmesan cheese, grated
Directions
Step 1
Prepare and cook McKenzie's Whole Green Lentils as per directions on pack. Drain thoroughly. Set aside.
Step 2
Preheat oven to 180C.
Step 3
In a large bowl, mix together cooked and drained lentils, mince, onion, garlic, herbs, lemon rind, tomato paste, feta cheese and egg until thoroughly combined. Season with McKenzie's Whole Black Peppercorns.
Step 4
Press into a lightly greased loaf tin and bake in preheated oven for 30 minutes.
Step 5
Sprinkle evenly with parmesan cheese and continue baking for a further 15-20 minutes, or until cooked through.
Step 6
Turn loaf out onto a board and slice into thick slices to serve.
Step 7
Tips: Try serving with mashed sweet potato and steamed vegetables. Delicious served cold as a hearty lunch. Place slices of the loaf between slices of sourdough bread and top with salad ingredients such as lettuce, tomato and grated carrot.
