Vegetable Korma

Delicious as an appetiser or a vegetarian main meal - just add some steamed rice.

750g pumpkin, peeled, seeded
3/4 cup McKenzie's Red Lentils
400g can diced tomatoes, undrained
350g can Korma Curry sauce
3/4 cup water
1 bunch English spinach, trimmed, chopped
1/3 cup coriander leaves (Optional)
Directions
Step 1
Cut pumpkin into 2cm cubes.
Step 2
Combine pumpkin, McKenzie's Red Lentils, undrained tomatoes, curry sauce and water in large saucepan. Bring to boil, reduce heat to medium-low and simmer covered for 20 minutes stirring occasionally or until pumpkin is tender.
Step 3
Add spinach and cook for 1 minute or until spinach is wilted.
Step 4
Stir in coriander (optional) and serve with crusty bread if desired.
