Vegetable Korma
Delicious as an appetiser or a vegetarian main meal - just add some steamed rice.

| 750g | pumpkin, peeled, seeded |
| 3/4 cup | McKenzie's Red Lentils |
| 400g can | diced tomatoes, undrained |
| 350g can | Korma Curry sauce |
| 3/4 cup | water |
| 1 bunch | English spinach, trimmed, chopped |
| 1/3 cup | coriander leaves (Optional) |
Directions
Step 1
Cut pumpkin into 2cm cubes.
Step 2
Combine pumpkin, McKenzie's Red Lentils, undrained tomatoes, curry sauce and water in large saucepan. Bring to boil, reduce heat to medium-low and simmer covered for 20 minutes stirring occasionally or until pumpkin is tender.
Step 3
Add spinach and cook for 1 minute or until spinach is wilted.
Step 4
Stir in coriander (optional) and serve with crusty bread if desired.
