Apple & Barley Baked Pudding

| 225 grams | McKenzie's Pearl Barley |
| 3 | medium apples, peeled, cored and finely sliced |
| 60 grams | raw castor sugar |
| 1 | lemon, juiced |
| 2 teaspoons | McKenzie's Ground Cinnamon |
| 1 tablespoon | butter |
Directions
Step 1
Preheat oven to 175C.
Step 2
Boil McKenzie's Pearl Barley as per instructions on pack. Drain any excess liquid away.
Step 3
Add apples, sugar, lemon juice and McKenzie's Ground Cinnamon to barley.
Step 4
Pour into lightly greased 5 cup capacity ovenproof dish.
Step 5
Dot with butter, cover with foil and bake for 1 hour.
Step 6
Serve with cream or vanilla ice-cream.
Step 7
Tips: Different flavour combinations for this dish are limited only by your imagination. Try apple/rhubarb, peach/apricot, stewed quince/strawberry, mixed berry. Juse use 2 1/2 cups of your fruit choice. The cinnamon can also be substituted for other flavours such as ground ginger or vanilla extract.
