Simple Sponge
Simple sponge is made with McKenzie's Rice Flour and is gluten free and suitable for anyone allergic to wheat-based products.

| 1 teaspoon | Ward's Baking Powder |
| 2 tablespoons | cornflour |
| Half cup | sugar |
| 3 | eggs |
| 2 tablespoons | McKenzie's Rice Flour |
Directions
Step 1
Place eggs in warm bowl and beat until thick. Add sugar gradually and continue beating until the mixture will hold shape.
Step 2
Sift cornflour, McKenzie's Rice Flour, Ward's Baking Powder twice and fold lightly into mixture.
Step 3
Pour mixture into two 18cm (7inch) cake tins which have been lined on the base and well greased and floured.
Step 4
Bake in moderate oven for about 20-25 minutes.
Cool slightly before removing from tins.
