Tomato and Lentil Spread

125g McKenzie's Red Lentils
30g butter
2 tablespoons tomato puree
2 teaspoons lemon juice
To taste McKenzie's Australian Natural Sea Salt
To taste McKenzie's Whole Black Peppercorns
Directions
Step 1
Place rinsed McKenzie's Red Lentils in a small saucepan. Cover with one cup of water and cook over medium heat until tender and all water has been absorbed. Stir through butter and leave to cool.

Mix through tomato puree and lemon juice and mash with a fork to a rough paste.

Tips: Spoon onto French bread stick slices, top with grated cheese and grill until cheese bubbles. Serve for breakfast or as a healthy snack. This recipe could also be used for a dip - ingredients such as chilli or basil/oregano could be added to this dish.
