Energy Balls

Flavour combinations are endless with these delicious and nutritious Energy balls.

1/2 cup McKenzie's Chick Peas
1 cup raw mixed nuts (ie almonds, walnuts, hazelnuts, brazil nuts)
1 cup McKenzie's Natural Whole Oats
1/2 cup McKenzie's Shredded Coconut
1 teaspoon McKenzie's Ground Cinnamon
1/3 cup dried cranberries
2 tablespoons raisins
2 tablespoons dried apple, finely diced
2 tablespoons water
3 tablespoons honey or maple syrup
1 teaspoon vanilla extract
Directions
Step 1
Prepare McKenzie's Chick Peas by cooking in 1 1/2 cups of water until well cooked, approximately 1 to 1 1/2 hours.
Step 2
Meanwhile, put the nuts and McKenzie's Natural Whole Oats into the food processor and blend until coarse.
Step 3
Place nut mix into a large bowl and add McKenzie's Shredded Coconut, McKenzie's Ground Cinnamon and dried fruits and mix thoroughly.
Step 4
Place warm chickpeas into the food processor with water, honey and vanilla extract and puree to a smooth paste.
Step 5
Spoon chickpea mix into the dry ingredients and stir until combined. Mixture should combine to form balls easily.
Step 6
Roll mixture into balls approximately the size of a walnut. Place in an airtight container and store in the fridge.
Step 7
Tips: These balls are a nutritious snack for kids and adults alike! So many flavour combinations could be used. Here are just a few ideas: 1. Omit cranberries, raisins and dried apple and replace with dried mango and pineapple pieces for a summery feel! 2. For an indulgent treat, omit dried fruit and honey and add 2/3 cup dark chocolate chips and 3 tablespoons strong espresso. 3. Omit cranberries, raisins and dried apple and replace with finely chopped glace ginger and finely diced dried pears.
