Geoff's Coconut Ice
A perennial favourite with the kids and is so refreshing on those warm summer days!

| 1 tin | sweetened condensed milk |
| 4 cups | icing sugar |
| 1 teaspoon | vanilla essence |
| 1 packet | McKenzie's Shredded Coconut |
| Few drops | pink food colouring |
Directions
Step 1
Mix all ingredients, except for the pink food colouring together and divide in half. Evenly press one half of the mixture into a foil lined slice tin.
Step 2
Colour the other half of the mixture with a few drops of pink food colouring. Press the pink mixture onto the white layer.
Step 3
Refrigerate for approximately 30 minutes and then cut into 3cm squares.
