Mamma Lucia's Zuppa Di Lenticchie

500g McKenzie's Whole Green Lentils
1 tablespooon extra virgin oil
1 onion chopped
1 clove garlic crushed
2 stalks fresh parsley
2 1/2 litres water
2 sticks celery
1 large tomato diced
1 carrot grated
2 medium potatoes grated
To taste McKenzie's Australian Natural Sea Salt
To taste McKenzie's Ground Black Pepper
Directions
Step 1
Place McKenzie's Whole Green Lentils in a large bowl and fill with water, tossing lentils several times. Drain water and repeat.
Step 2
In a large saucepan heat oil and add the chopped onion, garlic, parsley. Cook over low heat until onion is soft and golden.
Step 3
Add McKenzie's Whole Green Lentils and water. Stir, add celery, diced tomato. Add grated carrot and potato. Cover and bring to the boil. Reduce heat and stir with a wooden spoon.
Step 4
Cook on a low heat for approximately 30 minutes or until lentils are tender. Season to taste McKenzie's Australian Natural Sea Salt and McKenzie's Ground Black Pepper. Serve with crusty Italian bread.
Step 5
Tip: You can also add cooked white rice to this dish.
