Mamma Lucia's Zuppa Di Lenticchie

| 500g | McKenzie's Whole Green Lentils |
| 1 tablespooon | extra virgin oil |
| 1 | onion chopped |
| 1 clove | garlic crushed |
| 2 stalks | fresh parsley |
| 2 1/2 litres | water |
| 2 sticks | celery |
| 1 large | tomato diced |
| 1 | carrot grated |
| 2 medium | potatoes grated |
| To taste | McKenzie's Australian Natural Sea Salt |
| To taste | McKenzie's Ground Black Pepper |
Directions
Step 1
Place McKenzie's Whole Green Lentils in a large bowl and fill with water, tossing lentils several times. Drain water and repeat.
Step 2
In a large saucepan heat oil and add the chopped onion, garlic, parsley. Cook over low heat until onion is soft and golden.
Step 3
Add McKenzie's Whole Green Lentils and water. Stir, add celery, diced tomato. Add grated carrot and potato. Cover and bring to the boil. Reduce heat and stir with a wooden spoon.
Step 4
Cook on a low heat for approximately 30 minutes or until lentils are tender. Season to taste McKenzie's Australian Natural Sea Salt and McKenzie's Ground Black Pepper. Serve with crusty Italian bread.
Step 5
Tip: You can also add cooked white rice to this dish.
