Whole Oat Apricot Cookies

| 1 cup | butter |
| 1 1/2 cups | brown sugar |
| 1/3 cup | golden syrup |
| 3 | eggs |
| 3 cups | McKenzie's Natural Minute Oats |
| 2 cups | plain flour |
| 1 tablespoon | McKenzie's Ground Cinnamon |
| 1 teaspoon | McKenzie's Ground Nutmeg |
| 1 teaspoon | ground cloves |
| 1 teaspoon | McKenzie's Bi-Carb Soda |
| 1/2 teaspoon | salt |
| 250 gram | dried apricots finely chopped |
Directions
Step 1
In a mixing bowl, cream the butter and brown sugar and then beat in the golden syrup. Add the eggs one at a time beating well after each.
Step 2
Combine all the remaining ingredients and stir into the batter. Shape into small balls (golf ball size) and place onto well greased baking trays or lined with baking paper.
Step 3
Bake at 160C for about 10 minutes or until golden brown.
Makes about 50 cookies.
Step 4
Tips: To reduce the spicy flavour reduce the ground cinnamon to about half or as desired.
Try dried raisins or dried figs as an alternative to dried apricots.
