Whole Oat Apricot Cookies

1 cup butter
1 1/2 cups brown sugar
1/3 cup golden syrup
3 eggs
3 cups McKenzie's Natural Minute Oats
2 cups plain flour
1 tablespoon McKenzie's Ground Cinnamon
1 teaspoon McKenzie's Ground Nutmeg
1 teaspoon ground cloves
1 teaspoon McKenzie's Bi-Carb Soda
1/2 teaspoon salt
250 gram dried apricots finely chopped
Directions
Step 1
In a mixing bowl, cream the butter and brown sugar and then beat in the golden syrup. Add the eggs one at a time beating well after each.
Step 2
Combine all the remaining ingredients and stir into the batter. Shape into small balls (golf ball size) and place onto well greased baking trays or lined with baking paper.
Step 3
Bake at 160C for about 10 minutes or until golden brown. Makes about 50 cookies.
Step 4
Tips: To reduce the spicy flavour reduce the ground cinnamon to about half or as desired. Try dried raisins or dried figs as an alternative to dried apricots.
