1 cup McKenzie's Natural Whole Oats
1 cup wholemeal plain flour
1/2 cup self raising flour
2 teaspoons Ward's Baking Powder
1/2 teaspoon salt
2 eggs
3/4 cup brown sugar
3/4 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla essence
Directions
Step 1
In a bowl combine McKenzie's Natural Whole Oats, wholemeal plain flour, self raising flour, Ward's Baking Powder and salt. In another bowl, beat eggs, brown sugar, milk, vegetable oil and vanilla essence.
Step 2
Stir the mixture into the dry ingredients just until moistened. Spoon mixture into a well greased muffin tray, each cup about half full to allow for rising.
Step 3
Bake in oven on 180C for about 15 minutes or until skewer comes out clean. Cool in muffin tray for 5 minutes before placing on a wire rack.
Step 4
Tips: Great for breakfast with a dollop of jam. Enjoy muffins with a hot chocolate as a late night snack.
