Traditional Pea & Ham Soup

| 500g | McKenzie's Green Split Peas |
| or 500g | McKenzie's Yellow Split Peas |
| 3 | carrots, diced |
| 3 | celery sticks, diced |
| 1 | large onion, diced |
| 2 | cloves garlic, finely sliced |
| 1 | smoked ham hock |
| 1 | chicken stock cube |
| 12 cups | water |
| 1 | McKenzie's Bay Leaves |
| To taste | McKenzie's Australian Natural Sea Salt |
| To taste | McKenzie's Whole Black Peppercorns |
Directions
Step 1
Combine all ingredients in a large pot. Cover and simmer for approximately 1 - 1 1/2 hours or until thickened, stirring occasionally.
Step 2
Remove hock and prepare by removing skin, dice ham and set aside. Discard bay leaf.
Step 3
Puree soup in a food processor or blender.
Step 4
Add ham back into pureed soup and stir through.
Step 5
Season to taste with McKenzie's Australian Natural Sea Salt and McKenzie's Whole Black Peppercorns. Garnish with parsley if desired.
Step 6
Tips: Serve with easy homemade croutons. Just cut wholemeal bread slices (approximately 1 slice per person) into 1cm cubes (removing crusts), spray lightly with olive oil spray and bake in preheated oven 180C oven for 10 minutes or until golden brown. Cool before placing on top of soup to serve. For garlic croutons, cut a garlic clove in half and rub over the croutons as they come out of the oven. For parmesan croutons, sprinkle some freshly grated parmesan cheese over the bread pieces prior to baking.
