Jill's Seed Tapioca (Sago) Plum Pudding

Delicious and moist plum pudding.

1 cup dried mixed fruit
200 grams plums pitted
1 cup breadcrumbs
1/2 cup brown sugar
1 tablespoon butter
4 tablespoons McKenzie's Seed Tapioca (Sago)
1 teaspoon McKenzie's Mixed Spice
1/2 teaspoon McKenzie's Bi-Carb Soda
1/2 cup milk
Self raising flour to bind
Directions
Step 1
Soak McKenzie's Seed Tapioca (Sago) overnight in enough water to cover well.
Step 2
Mix butter and sugar. Stir in McKenzie's Seed Tapioca (Sago), breadcrumbs, plums, dried mixed fruit and McKenzie's Mixed Spice.
Step 3
Dissolve McKenzie's Bi-Carb Soda in the milk and add to mixture. Add enough self raising flour to bind.
Step 4
Steam on a double boiler for three hours or until pudding is cooked. Serve hot with custard or freshly whipped cream.
