Trisha's Beef and Vegetable Stew

Hearty winter warming stew. Simple to prepare and all in the slow cooker.

1 to 1 1/2 kilos chuck or round steak
2 carrots sliced
Quarter butternut pumpkin chopped
1 swede choped
1 parsnip chopped
2 sticks celery chopped
6 potatoes quartered
2 litres beef stock
250g McKenzie's Soup Mix
To taste McKenzie's Table Friendly Ground Black Pepper
To taste McKenzie's Table Friendly Fine Table Salt
1/4 cup parsley
Directions
Step 1
Chop meat into chunks, don't worry about being fussy, it is all going to break down in the cooker. Put meat into slow cooker or into a large pot.
Step 2
Chop all vegetables roughly and put into slow cooker or pot. Rinse McKenzie's Soup Mix under water until water runs clear and place in slow cooker or pot. Pour in beef stock.
Step 3
Break up parsley and add McKenzie's Table Friendly Ground Black Pepper and McKenzie's Table Friendly Fine Table Salt to taste. Don't forget stock is already salty so only add a little at a time.
Step 4
Put lid on slow cooker and set to either Auto or Low and let it cook for 6-8 hours, or approximately 4 hours on high. You get better results when it's cooked slowly though. Alternatively cook in a pot on the stove top on the lowest setting. Serve with crunchy bread.
