Lentil Patties with Yoghurt Mint Sauce

Vegetarian delight. Recipe can be made a day ahead.

1/2 cup McKenzie's Red Lentils
1/2 stick celery, chopped
1 small carrot, chopped
2 cups water
1/2 teaspoon ground coriander
1/4 teaspoon cumin
1/4 teaspoon ground oregano
1 tablespoon fresh parsley, chopped
1 cups stale breadcrumbs
2 tablespoons plain flour
1 egg white lightly beaten
1/4 cup packaged breadcrumbs
1 tablespoon polyunsaturated oil
McKenzie's Salt and Pepper Grinder to taste
.... Yoghurt Mint Sauce ....
1/4 cup low-fat plain yoghurt
2 teaspoons fresh mint, chopped
2 teaspoons fresh parsley, chopped
1 small clove garlic, crushed
1 teaspoon lemon juice
Directions
Step 1
Combine McKenzie's Red Lentils, celery, carrot, water, coriander, cumin and oregano in pan, bring to boil, simmer covered for about 20 minutes or until mixture is thickened; cool. Stir in parsley and stale breadcrumbs. Shape mixture into 4 patties, toss in flour, dip in egg white, then packaged breadcrumbs.
Step 2
Heat oil in non-stick pan, add patties, cook until well browned on both side; drain on absorbent paper . Serve with Yoghurt Mint Sauce.
Step 3
....Yoghurt Mint Sauce.... Combine all ingredients in a bowl; mix well.
