Yellow Split Pea Soup

| 1 1/2 - 2 cups | McKenzie's Yellow Split Peas |
| 1 stalk | celery |
| 7 cups | chicken or meat stock or water |
| 1 teaspoon | cumin |
| Juice of | half a lemon or more (optional) |
| 2 tablespoons | parsley finely chopped |
| Fried | croutons |
| To taste | McKenzie's Iodised Salt |
| To taste | McKenzie's Ground Black Pepper |
Directions
Step 1
Add washed McKenzie's Yellow Split Peas and celery to the stock or water, bring to the boil and simmer gently covered until peas are very soft and nearly disintegrating. The cooking time will vary but it should take about 1 - 1 1/2 hours. Use a pressure cooker if available, and cook for 15 minutes.
Step 2
When the peas are quite soft, season with McKenzie's Iodised Saltand McKenzie's Ground Black Pepper. The ground cumin and lemon juice may be added. Simmer for a few minutes longer to allow the peas to absorb the seasoning, then blend in an electric blender to achieve a smooth cream.
Step 3
Return to the pan, bring to the boil again, and thin with a little water if necessary.
Step 4
Garnish the soup with chopped parsley and fried croutons.
