Noeleen's Stuffed Peppers with Beans

Peppers stuffed with mince, rice and beans, cooked in tomato soup in a slow cooker.

6 green or red peppers
1 medium onion chopped
2 cloves garlic chopped
200g McKenzie's Four Bean Mix
500g mince beef or lamb
1/2 teaspoon McKenzie's Table Friendly Fine Table Salt
1/2 teaspoon McKenzie's Table Friendly Ground Black Pepper
1/2 cup chicken stock or wine
1 cup rice cooked
1 can condensed tomato soup
1 can water
Directions
Step 1
Take tops off peppers and remove seeds. In a large bowl place onion, garlic, McKenzie's Four Bean Mix, mince, McKenzie's Table Friendly Fine Table Salt, McKenzie's Table Friendly Ground Black Pepper stock or wine and rice. Mix well and fill peppers with mixture.
Step 2
Place peppers in slow cooker or crock pot and pour over soup and water. Cover with lid and cook on high for 3 hours.
