Italian Style Soup Mix Minestrone
A much requested favourite from the back of the Italian Style Soup Mix packet.

| 375g | McKenzie's Italian Style Soup Mix |
| 1 medium | ham hock (optional) |
| 1/4 cup | polyunsaturated oil |
| 1 large | onion, chopped |
| 2 stalks | celery, chopped |
| 2 cloves | garlic, chopped |
| 4 tablespoons | parlsey, chopped |
| 2 medium | carrots, chopped |
| 240g | tomato paste |
| 2 cups | cabbage, chopped |
| To taste | McKenzie's Ground Black Pepper |
| 4 cups | water |
| 1 cup | shell noodles (or substitute |
| 4 tablespoons | rice |
| Grated | parmesan for serving (optional) |
Directions
Step 1
Cook McKenzie's Italian Style Soup Mix together with ham hock, according to either of the methods listed on the back of the packet. Remove ham hock and chop meat into small pieces, then return meat to the soup mix.
Step 2
Heat oil in a pan and saute onion, celery, garlic, parlsey and carrots for 5-10 minutes. Add tomato paste, cabbage and McKenzie's Ground Black Pepper if desired. Add this mixture together with a further 4 cups of water totalling 10 cups to the cooked soup mix. Add the shell noodles and rice and simmer for 30 minutes or until vegetables are tender.
Step 3
Serve steaming hot with grated parmesan.
